Note before we begin: The first recipe below is the original Quaker oats cookie recipe, but you can use gluten free oats as an option, if you have food restrictions.

Easy Oatmeal Cookie Recipe Ingredients

Wet Ingredients:
1/2 cup (1 stick) plus 6 tablespoons butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
 
Dry Ingredients:
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker® Oats (quick or old fashioned, uncooked)
1 cup raisin

Simple Oatmeal Cookie Recipe Preparation

  • Heat oven to 350°F.
  • In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
  • Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well.
  • Add oats and raisins; mix well.
  • Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake 8 to 10 minutes or until light golden brown.
  • Cool 1 minute on cookie sheets; remove to wire rack.
  • Cool completely.
  • Store tightly covered.

Variations

Bar Cookies:

  • Press dough onto bottom of ungreased 13 x 9-inch baking pan.
  • Bake 30 to 35 minutes or until light golden brown.
  • Cool completely in pan on wire rack.
  • Cut into bars.
  • Store tightly covered.
  • Makes 24 BARS.

Additional Ingredients:

  • Stir in 1 cup chopped nuts.
  • Substitute 1 cup semisweet chocolate chips or candy-coated chocolate pieces for raisins; omit cinnamon.
  • Substitute 1 cup diced dried mixed fruit.
  • HIGH ALTITUDE ADJUSTMENT: Increase flour to 1-3/4 cups and bake as directed.

My Variation for Oatmeal Cookies Recipes

Follow the instructions above, but I made 5 changes.
Change #1: Instead of using 1 stick and 6 tablespoons of butter, I used 1 stick of butter and 6 tablespoons of coconut oil.
Change #2: I used Bob’s Red Mill Gluten Free rolled oats.
Change #3: I used white wheat four instead of all purpose flour. Next time, I’ll use unbleached, organic all purpose flour.
Change #4: I used aluminum free baking soda.
Change #5: When the recipe instructs you to mix the flour, baking soda, etc (all dry ingredients), I mixed in 1/4 cup of raw unsweetened cacao powder.
 
You can always add stuff like chocolate chunks, chocolate chips, shredded coconut, pecans, almonds, flaxseeds (ground or whole), or even M&Ms!  Whatever strikes your fancy.
And you can always substitute the 2 eggs for 2 tablespoons of ground flaxseeds and 6 tablespoons of water.  Mix them in a bowl and let them sit for a few minutes to “gel”, then use in the recipe instead of 2 eggs. The ratio is 1tbsp ground flaxseed in 3 tbsp of water to replace ONE EGG.
