Oat flour is expensive, but you can make your own very easily using old-fashioned (NOT quick cook) oatmeal. I use gluten-free whole grain oats.
To make oat flour, add one cup at a time of old-fashioned or steel cut oats to your blender.
Pulse on high until it the oatmeal becomes the consistency of flour. That’s it!
Oatmeal Muffins (Oat Flour Muffins)
Preheat oven to 375 degrees.
Dry ingredients:
2 cups oat flour (gluten free)
1/2 cup old-fashioned oats (gluten free)
1/3 cups coconut flour (organic)
1/8 cup coconut sugar (organic)
2 tsp baking powder (aluminum free)
1/8 tsp nutmeg
1/2 tsp cinnamon (organic)
Wet ingredients:
1 cup almond or coconut milk (organic)
1 whole banana, mashed into pulp
1 cup pitted cherries or fresh cranberries
1/2 tsp vanilla or almond extract
1. Mix all dry ingredients.
2. Mix all wet ingredients.
3. Slowly incorporate wet ingredients onto dry ingredients.
If the mix is too soupy, add more oats. If it’s too thick, add more milk.
4. Let mix sit for about 5 minutes for the oats and coconut flour to absorb liquids.
5. Grease muffin pan.
6. Spoon in mixture into muffin pan. I like to use an ice cream scoop.
7. Top with cinnamon, if desired.
8. Bake for 15-20 minutes.

Note: These muffins won’t be super fluffy, in fact, they will be rich in texture, but not chewy. Quite phenomenal.
