There are many gluten free flour recipes out there. I have tried so many! Some were ok and some were plain useless. There are some when the bread was a soggy mess, sometimes, the dough never rose and other times, the baked product tasted like cardboard. It was so frustrating. My only option was simply to go with the ready-made (super expensive) gluten free all-purpose flour.
Well, since I had so many bags of so many gluten free flours ranging from oat flour and almond flour to tapioca flour and sorghum flour that one good say I decided to try out my own gluten free all-purpose flour recipes. The interesting part was that it wasn’t just about finding the right combination of flours, but also about how the mix bakes and how it tastes, which, in my opinion, are the best and toughest tests on whether the mixes pass the test or not.
I’m not even going to tell you how many attempts I made and how many terrible outcomes we had, but I think I finally have a few recipes to share with you! I am so excited! Come take a look! Oh and print out the labels for your flour and other baking containers! They are so cute!
You can use these mixes to bake anything that calls for all-purpose flour. I have recipes for pancakes, homemade breads, scones, waffles, rolls, apple cinnamon muffins, blueberry muffins and even cookies.
These yield 2 1/2 cups.
Recipe #1
1 1/2 cups brown rice flour
1/2 cups potato starch
1/4 cup cup garbanzo flour
1/4 cup tapioca flour
1 tsp xanthan gum

Recipe #2
1 1/2 cups brown rice flour
1/2 cups potato starch
1/4 cup cup sorghum flour
1/4 cup tapioca flour
1 tsp xanthan gum

Recipe #3
1 1/2 cups brown rice flour
1/2 cups potato starch
1/4 cup cup white rice flour
1/4 cup tapioca flour
1 tsp xanthan gum
This yields 2 cups of flour.
Recipe #4
1 cup whole almonds (with skin or blanched)
1 cup gluten free oats
1 tsp xanthan gum
Place almonds in blender and blend until rough powder.
Add gluten free oats and blend until both almonds and oats are pulverized.
Mix in xanthin gum.
Keep in airtight container. I prefer mason jars with metal lids that seal very well.
